Favorite Recipe: Fresh Salmon Tartare Canapés from Arnaud’s Restaurant
Ingredients:
8 oz. very fresh salmon, cleaned of bones and skin, finely chopped by hand
½ oz. small capers
1 finely chopped egg yolk
½ oz. shallots, finely diced
1 Tsp. chives, finely diced
Juice of ½ lemon
One drop of Tabasco
Salt and pepper, to taste
16 quail eggs, hard-boiled and peeled
Preparation:
Mix all of the ingredients except the quail eggs gently together in a wooden bowl. Cut quail eggs in half and spoon salmon tartare on top of each. |
