Favorite Recipe: Grilled Fish with Upperline Salad Nicoise
Ingredients:
6 new potatoes, sliced
2 cups green beans, halved
1 cup cherry tomatoes, halved
Salt and pepper, to taste
1 cup black calamata olives, pitted and sliced in half
Olive oil or herb vinaigrette, to taste
Preparation:
Cook the potatoes in salted boiling water until just tender. Cook green beans in heavily salted water for 2-3 minutes, drain and refresh in ice water. Put potatoes, green beans, tomatoes in a bowl and mix in salt and pepper. At this time you can add a good olive oil or an herb vinaigrette.
To serve, cover a platter with lettuce leaves and add the salad to the platter. You may top with a grilled fish of your choice.

Grill fish in your favorite manner. Red snapper, tuna, salmon and swordfish are favorites of the Upperline.
