Favorite Recipe: Cuban Beef with Potatoes from Southern Hospitality Catering
Ingredients:
¼ cup olive oil
1 yellow onion, chopped
1 poblano pepper, chopped
2 pounds beef round, diced into 1 inch cubes
1 Tbs. paprika
1 (16 oz) can stewed diced tomato
1 Tbs. garlic, minced
1 Tbs. cilantro
1 Tbs. oregano
1 pound Yukon gold potatoes, diced into 1 inch cubes
Salt and pepper, to taste
Preparation:
In a large pan, sauté onion and pepper until light brown. Add beef and paprika and brown. Add tomatoes, garlic and herbs. Simmer 5 to 10 minutes. Add potatoes and cook until tender. Season to taste. Serve over hot rice. Serves 8. |
