Favorite Recipe: Caribbean Shrimp and Pineapple Rice from Southern Hospitality Catering
Ingredients:
2 cups converted rice, uncooked
¼ cup sesame oil
¼ cup olive oil
1 Jalapeno pepper fresh, seeded, diced
¼ cup dried red bell pepper
¼ cup onion, diced
2 pounds rash shrimp (50-60 count)
1 cup fresh pineapple, diced
1/3 cup fresh basil, chopped
½ cup light soy sauce
¼ cup green onion, chopped
Preparation:
Cook the rice according to directions and set aside to cool at room temperature. In a large skillet, add oils then sauté peppers and yellow onion until lightly brown. Add shrimp and sauté until nearly cooked. Add diced pineapple and fresh basil. Add cooked rice, constantly stirring gently. Add soy sauce and stir until hot. Serve immediately and garnish with chopped green onion. Serves 8. |
