Favorite Recipe: Chicken Bonne Femme from Galatoire’s
Ingredients:
2 chickens, cut up for frying
½ cup oil
4 potatoes, sliced thin
1 large onion, sliced thin
1 clove of garlic, minced
Salt and pepper, to taste
Parmesan cheese, to taste
1 Tbs. minced fresh parsley
Preparation:
Sauté chicken in oil to desired degree of doneness. While chicken is frying, cottage fry the potatoes. After chicken is browned but not entirely done, add onion, garlic, salt and pepper to taste. Before serving, drain all oil from chicken and top with potatoes, Parmesan cheese and parsley. Serves 4.
